When did you win Top Chef?

9 years ago I think. It was the 3rd Edition

Was it easy to get on the show?

I lived in London at the time and I came to Poland for the casting stage and I got in so they must have liked me 🙂

Did you hate any of the other contestants?

Hahaha No. I’m still in touch with many of them.

What if you didn’t win?

I had plans to move to Australia as I wasn’t counting on winning. You always have to have a backup plan 🙂

How much was the prize and how long did you have to wait for it?

100,000 PLN. It was about a month

Tax-free?

Hahaha. No

Was there a point in the competition that you thought you could win?

No. Actually quite the opposite. I think it was after the 9th episode I was thinking of quitting. It was a very stressful time.

How did you start at Epoka?

They contacted me. I think they invited 5 chefs to prepare a tasty menu and cook each dish for the owner. They must have liked my food 😉

Do you eat normal food outside work?

Hahaha. Of course! I’m just like everyone else. At home it’s a quick spaghetti with tomato sauce. 15mins. Quick and easy!

Who cooks at home?

Usually my GF

Does she criticize your food when you cook at home?

She normally likes it 😉

Do you run your kitchen at Epoka like Gordon Ramsey?

Hahaha. No. We have music in my kitchen. We have a great atmosphere!

Do you never shout?

Sometimes yes but I try not to.

Have you sacked somebody yet?

They sacked themselves 😉

Are men better than women at cooking?

No. Maybe it’s a more popular career choice for men but I know some amazing female chefs!

Would you work in a burger bar?

Sure. Why not? Although right now I’m into technical cooking. Food at the competition level is fascinating for me.

How long did it take you to prepare your newest 20-course menu?

2-3 weeks minimum.

How often does it change?

Roughly every 1.5 – 2 months

Does the boss have to test it every time?

Hahaha. No. He trusts me. I have free reign in the kitchen.

Are you after a Michelin Star?

It’s always nice for a chef to have a Michelin Star but the biggest compliment is when customers love your food.

How much do top chefs in Poland earn?

It depends on the employer but I would say between 10,000-20,000 PLN.

Have you improved a lot since the show?

For sure! Experience is everything. Plus, historic recipes are really interesting to me and have helped to take my cooking to the next level.

Has anybody complained about your food at Epoka?

Hahaha. Not yet

Why are there no 3 Michelin Star restaurants in Poland?

It’s strange. In Singapore, they have a Michelin Star street food restaurant. In Poland, in my opinion, there are many restaurants that should have stars so maybe you need to ask Michelin 😉

Always 20. 20 is WOW!!!
